Sandwich Production and Line Operations

High-volume assembly, portion control, food cost, line speed, and allergen segregation. ServSafe Food Protection Manager certification is embedded in tuition.
The line operations practicum is conducted in the Division's production kitchen. Students are assigned to a station for the full term; station reassignment is not available except on documented medical grounds approved by the Division Chair. Line speed standards are posted at each station. The posted times were revised in 2019 and again in 2023, are attainable, and have been demonstrated by faculty. This credential is not required for entry-level employment. The program is intended for students entering supervisory or franchise ownership tracks.
