Sustainable harvest and handling of non-timber forest products, including pawpaw, elderberry, and edible fungi. Identification, harvest permitting, landowner agreements, post-harvest handling, and grading for direct and wholesale markets.

Coursework addresses labeling and marketing statements for wild-harvested products; graduates are prepared to describe products without reference to medicinal effect.

Facilities and instruction

Barn Complex B and its paddock.
