Emory Klatt has been an Instructor in Dairy Processing since 2016. He holds a Certificate in Dairy Products Technology from the University of Wisconsin–River Falls and worked as plant supervisor at Fennimore Creamery from 2003 to 2016.
Mr. Klatt teaches DAI 110 (Dairy Processing Fundamentals), DAI 150 (Churn Operation and Butter Production), and DAI 210 (Heritage and Demonstration Operations). DAI 150 covers both batch and continuous churn methods, fat content testing, and yield recording.
He holds Ohio Licensed Dairy Plant Operator license #DP-4417 and maintains the College's three heritage churns, scheduling service and parts replacement as needed to keep the equipment in operating condition for student use.
Succession arrangements for operation of the 1953 barrel churn are documented in his personnel file at his request.
